One of our recent dishes, enjoyed by our residents, was Kahari Kebab Khyberi. This dish takes its name from the historic Khyber Pass, the mountainous region forming the border between Pakistan and Afghanistan, an area known for its rich culinary traditions and bold, aromatic flavours.

The recipe: Kahari Kebab Khyberi
This is a flexible, home-style recipe that works beautifully both in a domestic kitchen and within a professional care environment.
Ingredients
For the marinade:

Chicken breast

A little oil
Tip: When cooking at home, a good rule of thumb is to measure spices “by feel” – what comfortably fits in the centre of your palm is often just right.
Method
1. Prepare the marinade: Blend all ingredients into a paste, or finely chop and crush them together to release the full flavour.
2. Marinate the chicken: Coat the chicken breast evenly with the paste and a small amount of oil. Leave to marinate overnight to allow the flavours to fully develop.
3. Cook the chicken: Cook on a high heat the next day. This can be done by shallow frying, or for a deeper, smoky flavour, using a chargrill.
4. Vegetables: The same marinade can be used to create a rich, flavourful vegetable accompaniment.

Fry the vegetables on a high heat, then add the marinade paste and a few freshly chopped tomatoes. Allow to cook down for around ten minutes, until the mixture becomes rich and fairly dry.
